Turkey Fried Quinoa

I have a confession to make. I make extra food often because I adore this recipe. Roasting a chicken with vegetables? Chop up the leftovers and toss them in. Have 30 lbs of leftover turkey, sweet potatoes and green beans – throw them in! All you need as a base is cooked quinoa. Who doesn’t have that on hand? (Admit it, you’re a closet health nut. I know it!) This is stupid good, incredibly healthy, and a terrific way to use up leftovers. If you want more out of a dish, you are in the wrong place.

Turkey Fried Quinoa

1 to 2 cups cooked quinoa
2 green onions, chopped, white and green parts separated
2 eggs, lightly beaten
2 tbsp soy sauce, plus more to taste
Chopped cooked turkey, chicken, steak, pork, quail, lamb, you get the point...
Chopped cooked carrots, green beans, peas, etc.
Sesame and vegetable oil

In a large skillet, heat a splash of sesame and vegetable oil over medium heat. Add the white parts of the green onions and stir until wilted, 2 minutes. Stir in the eggs until set. Toss in the rest of your ingredients and heat through. Add the soy sauce and taste. Add more if necessary. Top with green scallions. I told you it was easy!
