* Healthy * Weeknight Winner *
This Spicy Basil Chicken from Cooking Light was our dinner last night and it was incredibly tasty and quite healthy! I used chicken breasts (4) instead of chicken thighs because that’s what I had on hand. I also did 1½ times the sauce since it was so delicious and my kid loves to “dunk” anything into sauce. It's got a little bit of a kick, so adjust the Sambal Oelek accordingly.
We served this with brown jasmine rice that had been tossed with freshly grated lime zest and ginger. The flavors worked perfectly together!
